Our verbena sweets are inspired from a jealously guarded ancient recipe. According to the original recipe, the master confectioner precisely weighs the verbena leaves, the herbs and the spices which will be used for the soaking.

This is followed by the cooking of the sugar, a very meticulous step which requires to get the knack and a great savoir-faire: the cooking temperature, the batter viscosity and the evaporation of water are key elements. According to the original recipe, the confectioners had no other option but to taste the sugar while cooking.

However, thanks to modern technology, they can identify the cooking steps from the temperature: for our verbena sweets, the temperature must reach 145°-150°, when the syrup hardens and becomes brittle. The last step consists of placing them in the moulds, letting them cool and sprinkling them with icing sugar.
